Scale
- 1 roll puff pastry, thawed
- 6 tbsp basil and tomato sauce (store-bought)
- 200 g rindless streaky bacon, diced
- 1 small onion, grated
- 125 g sliced button mushrooms
- Enough grated cheddar cheese to cover the topping
- 1/2 cup grated Parmesan cheese
- Sprinkle of cayenne pepper, Aromat spice, garlic and herb spice, dried sweet basil
Instructions
- Preheat your oven to 200°C (fan-forced if you’ve got it).
- To convert from a 200°C fan-forced (convection) oven to a regular (conventional) oven, you should increase the temperature by about 20°C, setting your regular oven to approximately 220°C/425°F.
- Roll out 1 roll of puff pastry on a floured surface, nice and as even as possible.
- Spread 6 tbsp basil and tomato sauce evenly over the pastry.
- Sprinkle 1 small, grated onion across the top.
- Scatter 200 g diced streaky bacon and 125 g sliced button mushrooms over the sauce.
- Add your cheddar cheese generously and then ½ cup grated Parmesan.
- Sprinkle over a pinch each of cayenne pepper, Aromat spice, garlic and herb spice, and dried sweet basil.
- Roll the pastry like a Swiss roll, tucking in the ends to seal.
- Slice into even wheels (roughly 2–3 cm thick) and place flat on a lightly floured baking tray.
- Bake at 200°C for 10 minutes, then reduce to 160°C and bake a further 15–20 minutes, until golden, puffed, and bubbling with cheese.
- Let them cool for a few minutes before serving. They’re best enjoyed warm, with gooey cheese and crispy bacon in every bite!
