Cheesy Bacon Wrapped Viennas

Description

These Cheesy Bacon Wrapped Viennas are one of those oven snacks that disappear way too fast. They’re salty, melty, a little messy, and honestly perfect when you want something comforting without much effort.


Ingredients

Scale
  • 12 smoked viennas
  • 12 mozzarella sticks
  • 12 bacon strips
  • Toothpicks, soaked in water for 10 mins

Instructions

  1. Preheat the oven to 180°C and line a baking tray with foil or baking paper.
  2. Place a rack on top if you have one. It helps the bacon crisp instead of sitting in grease.
  3. Using a small knife, carefully cut a slit lengthwise into each of the 12 smoked viennas. Don’t cut all the way through; you just want a pocket for the cheese.
  4. Push 1 mozzarella stick into each slit smoked vienna.
  5. If the cheese sticks are long, snap them in half so they fit better and don’t melt out everywhere.
  6. Wrap each stuffed smoked vienna tightly with 1 bacon strip, starting at one end and slightly overlapping as you go. Keep the seam underneath so it stays put while baking.
  7. Secure each one with a soaked toothpick, especially near the ends where the bacon likes to loosen up.
  8. Arrange the bacon wrapped viennas on the prepared tray with a little space between them.
  9. Bake at 180°C for 15 to 20 mins, turning once halfway, until the bacon is crisp and the mozzarella is melted and bubbly.
  10. If the bacon needs extra colour, switch the oven to grill for the last 2 to 3 mins. Keep a close eye on them because they brown fast.
  11. Let them rest for 2 mins before serving.
  12. The cheese is molten hot and needs a moment to settle.
  13. Serve warm with roasted sweet potato wedges, baked beans, and sweetcorn or with whatever you prefer. 
  14. They’re also great straight off the tray if we’re being honest.
