Description

Golden, cheesy scone bites with savory biltong (jerky) inside make every breakfast extra tasty. Perfect for a quick snack or weekend brunch.


Ingredients

  • 2 cups all-purpose flour
  • 5 tsp baking powder
  • 1/2 tsp salt (depending on taste, as the biltong is salty)
  • 1 cup almond milk (or regular milk)
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup grated cheddar cheese
  • 3/4 cup ± (150 g) biltong, sliced then chopped into smaller pieces

Instructions

  1. Preheat your oven to 400⁰F (200⁰C).
  2. Grease a 12-well muffin pan lightly.
  3. In a mixing bowl, toss together 2 cups all-purpose flour, 5 tsp baking powder, and ½ tsp salt. Give it a quick stir.
  4. In a separate bowl, whisk 1 cup almond milk or regular milk, ¼ cup vegetable oil, and 1 egg until smooth.
  5. Pour the wet mixture into the dry ingredients and mix gently.
  6. The dough will be a bit sticky but firm enough to handle.
  7. Fold in 1 cup of grated cheddar cheese and 5 oz (150 g) of chopped biltong. Make sure everything is distributed, but don’t overmix.
  8. Lightly oil your hands and shape the dough into 12 roughly equal balls. Drop them into your greased muffin pan.
  9. Bake in the oven for 20 minutes or until the tops are lightly golden and a skewer inserted comes out clean.
  10. Let them cool for a few minutes, then serve warm with fresh butter and a hot cup of coffee.
