Description
Golden, cheesy scone bites with savory biltong (jerky) inside make every breakfast extra tasty. Perfect for a quick snack or weekend brunch.
Ingredients

- 2 cups all-purpose flour
- 5 tsp baking powder
- 1/2 tsp salt (depending on taste, as the biltong is salty)
- 1 cup almond milk (or regular milk)
- 1/4 cup vegetable oil
- 1 egg
- 1 cup grated cheddar cheese
- 3/4 cup ± (150 g) biltong, sliced then chopped into smaller pieces
Instructions
- Preheat your oven to 400⁰F (200⁰C).
- Grease a 12-well muffin pan lightly.
- In a mixing bowl, toss together 2 cups all-purpose flour, 5 tsp baking powder, and ½ tsp salt. Give it a quick stir.
- In a separate bowl, whisk 1 cup almond milk or regular milk, ¼ cup vegetable oil, and 1 egg until smooth.
- Pour the wet mixture into the dry ingredients and mix gently.
- The dough will be a bit sticky but firm enough to handle.
- Fold in 1 cup of grated cheddar cheese and 5 oz (150 g) of chopped biltong. Make sure everything is distributed, but don’t overmix.
- Lightly oil your hands and shape the dough into 12 roughly equal balls. Drop them into your greased muffin pan.
- Bake in the oven for 20 minutes or until the tops are lightly golden and a skewer inserted comes out clean.
- Let them cool for a few minutes, then serve warm with fresh butter and a hot cup of coffee.
