Cheesy Spinach Quinoa Bake with Lamb Shanks

Description

This is one of those hearty, baked dishes that come together with what you’ve got on hand and still tastes as you planned it. The cheesy top and savoury mushrooms make it feel a bit special, even on an ordinary night.


Ingredients

  • 1 1/2 cups dry quinoa, cooked as per package directions and cooled slightly
  • 4 Tbsp butter
  • 2 heaped tsp minced garlic
  • 6 large mushrooms, sliced
  • 2 cups baby spinach, roughly chopped
  • 1/2 small packet baby carrots, steamed and chopped into bite-sized pieces
  • 1/2 onion, finely chopped
  • 1/2 cup sharp cheese, grated
  • 5 eggs
  • 1/4 cup milk
  • 1/4 cup Self-Rising flour
  • Salt and freshly ground black pepper, to taste
  • 2 extra eggs, beaten (for topping)
  • 1/2 to 3/4 cup extra cheese, for topping

Instructions

  1. Preheat your oven to 375⁰F (190⁰C) and lightly grease a 10×10 baking dish.
  2. Cook the 1½ cups of dry quinoa according to package directions. Set aside to cool down.
  3. In a pan, melt the 4 Tbsp butter over medium heat.
  4. Add the 2 heaped tsp minced garlic and cook for about 30 seconds until fragrant.
  5. Add the 6 sliced mushrooms and cook until they release their moisture and turn golden brown.
  6. Toss in the ½ chopped onion and cook until softened, about 3 to 4 minutes. Remove from heat.
  7. In a large bowl, combine the cooked quinoa, mushroom mixture, 2 cups chopped baby spinach, steamed baby carrots, and ½ cup grated sharp cheese and mix.
  8. In a separate bowl, whisk together the 5 eggs, 1/4 cup milk, and 1/4 cup Self-Rising flour until smooth and lump-free.
  9. Pour the egg mixture into the quinoa bowl.
  10. Season generously with salt and freshly ground black pepper, then mix everything until evenly combined.
  11. Spoon the mixture into your prepared baking dish and spread it out evenly.
  12. Gently pour the 2 beaten eggs over the top.
  13. Bake uncovered for 30 to 45 minutes, until set in the centre and lightly browned on top. If it jiggles too much in the middle, give it a few more minutes.
  14. Sprinkle over the ½ to 3/4 cup extra cheese and switch to the grill for a few minutes until melted and bubbly. 
  15. Let it rest for about 5 to 10 minutes before slicing. It firms up a bit and is easier to serve.
