Description

Tastes like comfort food, sneaks in veggies, and takes 10 minutes to prep. Chicken Spinach Casserole is genius.


Ingredients

Units Scale
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • About 250g mushrooms, chopped
  • 600g cooked chicken, cubed
  • 1 1/2 to 2 cups shredded cheese (any kind you like)
  • 2 cans condensed cream of chicken soup (don’t add water)
  • 3 eggs
  • 300-350g frozen chopped spinach (thawed + squeezed dry)
  • 2 cups more shredded cheese (yes, double cheese!)
  • 2 artichoke hearts, chopped

Instructions

  1. Toss everything into a big bowl and mix it all up really well.
  2. Scoop into a casserole dish, or split into smaller ones if you want to freeze some for later.
  3. Bake uncovered at 350°F (175°C) for 25–30 minutes, until it’s hot and bubbling.
  4. Let it sit for 5 minutes, and enjoy.
