- 1 red bell pepper, chopped
- 1 bunch green onions, chopped
- About 250g mushrooms, chopped
- 600g cooked chicken, cubed
- 1 1/2 to 2 cups shredded cheese (any kind you like)
- 2 cans condensed cream of chicken soup (don’t add water)
- 3 eggs
- 300-350g frozen chopped spinach (thawed + squeezed dry)
- 2 cups more shredded cheese (yes, double cheese!)
- 2 artichoke hearts, chopped
Instructions
- Toss everything into a big bowl and mix it all up really well.
- Scoop into a casserole dish, or split into smaller ones if you want to freeze some for later.
- Bake uncovered at 350°F (175°C) for 25–30 minutes, until it’s hot and bubbling.
- Let it sit for 5 minutes, and enjoy.
