- 12 eggs
- 1 cup cottage cheese
- 2 1/2 cups cooked chicken, diced
- 1 1/2 cups cheddar cheese, grated
- 1/2 red or orange bell pepper, diced
- 4 green onions, chopped
- 1 can (284ml) sliced mushrooms
- 1/2 can (200ml) small peas
- 1 Tbsp crushed garlic
- 3 Tbsp freshly grated Parmesan
- Salt and black pepper, to taste
Instructions
- Toss everything into a large mixing bowl and stir well.
- Pour the mix into a flat, square baking dish; this helps it cook more evenly.
- Sprinkle the Parmesan on top.
- Bake at 375°F until the eggs are set and the top turns golden.
- Serve it warm with a fresh green salad.
Quick Tip:
If it looks a little soft in the center, just scoop from the edges first and pop the rest back in the oven for a few more minutes. Using a wider, flatter pan next time makes baking easier. Still, this dish turned out delicious, and it’s already been requested again!
