Chicken Chow Mein in 30 Minutes

Delight your taste buds with our Unconventional but scrumptious Chicken Chow Mein, ready in just 30 minutes.

Ingredients

Units Scale
  • 450g skinless boneless chicken thighs cut into bite-size strips.
  • 3 tbsp. VOO (Virgin Olive oil (regular oil will also work)
  • ± 1/2 bag uncooked dry chow mein noodles (±200g)
  • 34 large leaves of kale, shredded into bite-size pieces – remove the hard center stem.
  • 3/4 head/neck of a medium size butternut cut in julienne strips
  • 1 small, slivered onion
  • 2 finely chopped cloves of garlic.
  • 1/3 red pepper, cut into julienne strips.

Chow Mein Sauce

  • 6 tbsp. oyster sauce
  • 3 tbsp. low sodium soy sauce
  • 3 tbsp. oil
  • 2 tbsp. chicken broth extract and top it up with water to 1/2 cup mark. (You can also use Real Stock (boxed) Chicken Liquid Stock = 1/2 cup)
  • 1 tbsp. cornstarch
  • 1 tbsp. sugar

Instructions

  1. In a small bowl, add all the sauce ingredients.
  2. Use a whisk to combine and set aside.
  3. Prepare all your vegetables and make sure it is cut into julienne strips and that all basically the same size as this will help to have them all cooked at the same time.
  4. Cook your noodles according to package instructions then drain and set aside.
  5. Heat a large pan with olive oil over medium heat.
  6. Cook the chicken thigh strips in the oil until golden brown. Remove and set aside.
  7. Add the rest of the ingredients in the same pan as the chicken (without the chicken) and stir-fry/cook until it is al dente. Do not overcook, but make sure that all the veggies are cooked.
  8. Add the fried chicken and prepared noodles back into the pan with the veggies.
  9. Pour the chow mein sauce over all the ingredients in the pan and continue cooking everything together for another 2 to 3 minutes. Keep stirring to ensure that you do not burn the sauce at the bottom of the pan and that it’s mixed through and the sauce coat all the noodles.
  10. Garnish with chopped green onions (if you have some) and serve your dish directly out of the pan and piping hot!
  11.  This is the best Chicken Chow Mein (although not typical) that I have ever tasted.
