Creamy Chicken Florentine, A Spinach Lover’s Dream

Description

Ingredients

Scale
  • 500g spinach
  • 8 pieces of chicken
  • 2-3 cloves garlic, grated
  • 1 onion, finely chopped
  • 1 can coconut milk (or regular milk)
  • 1 cup vegetable stock
  • 2 tablespoons flour
  • Salt and pepper, to taste
  • 2-3 tablespoons butter
  • Oil (for cooking)


Instructions

  1. Start by seasoning the chicken with a good pinch of salt and pepper.
  2. Heat a bit of oil in a big pan and brown the chicken on all sides. 
  3. Once they’re golden and gorgeous, set them aside.
  4. In the same pan, melt the butter.
  5. Toss in the onion and garlic, letting them cook until they smell amazing and look soft.
  6. Add the spinach and watch it cook down to almost nothing!
  7. Sprinkle the flour over the mix and stir it through, so everything gets a nice, even coating.
  8. This will produce a super creamy sauce.
  9. Slowly pour in the vegetable stock while whisking until no lumps are visible in the sauce.
  10. When it’s smooth and silky, stir in the coconut milk. Full-fat milk works too if that’s what you’ve got. Both are delicious.
  11. Return the browned chicken to the pan.
  12. Place it into the sauce and let it all simmer on low heat for 5–7 minutes.
  13. You want the chicken cooked through and the flavors to come together.
  14. Serve it up with whatever makes you happy: rice, pasta, or crusty bread. Honestly, this sauce deserves something to soak it up. Dive in and enjoy every creamy, garlicky bite!
