Description

Skip the stuffing stress with Chicken with Un-Stuffing, easy, tasty, and family-friendly


Ingredients

Units Scale
  • 3 large carrots, diced
  • 3 celery stalks, diced
  • 1 medium onion, diced
  • A handful of garlic, finely chopped
  • About 12 mushrooms, quartered
  • 1 box of stuffing mix (the dry kind with crumbs and spices)
  • Seasoning to taste (I used Bovril and a little pepper)
  • Enough chicken (8-10 drumsticks) or enough for your crew, seasoned with salt and pepper
  • 1 cup of white wine (or hot water if you’re out of wine)

Instructions

  1. Preheat your oven to 375°F/190°C.
  2. Toss all the chopped veggies into a baking dish.
  3. Mix in the stuffing and seasonings.
  4. Add just enough hot water (or wine) to moisten the crumbs without making everything soggy, about a cup should do.
  5. Place the seasoned chicken right on top of the veggies, pressing it in a little.
  6. Pop it into the oven and bake until the stuffing is soft and the chicken’s cooked through. If you’re using drumsticks like I did, it should take under an hour.
  7. Serve with some rice, baked potatoes, or a fresh side.

I swear, this meal is easy, cozy, and seriously delicious. Wouldn’t you want to give it a shot?
