- 3 large carrots, diced
- 3 celery stalks, diced
- 1 medium onion, diced
- A handful of garlic, finely chopped
- About 12 mushrooms, quartered
- 1 box of stuffing mix (the dry kind with crumbs and spices)
- Seasoning to taste (I used Bovril and a little pepper)
- Enough chicken (8-10 drumsticks) or enough for your crew, seasoned with salt and pepper
- 1 cup of white wine (or hot water if you’re out of wine)
Instructions
- Preheat your oven to 375°F/190°C.
- Toss all the chopped veggies into a baking dish.
- Mix in the stuffing and seasonings.
- Add just enough hot water (or wine) to moisten the crumbs without making everything soggy, about a cup should do.
- Place the seasoned chicken right on top of the veggies, pressing it in a little.
- Pop it into the oven and bake until the stuffing is soft and the chicken’s cooked through. If you’re using drumsticks like I did, it should take under an hour.
- Serve with some rice, baked potatoes, or a fresh side.
