Ingredients
Cupcake Batter
- 1/2 cup cocoa powder
- 1/2 cup boiling water
- 1 cup cake flour
- 1 cup caster sugar
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/2 cup full cream milk
- 1/4 cup sunflower oil
- 1 egg
- 1 teaspoon vanilla essence
Chocolate Buttercream icing
- Β½ cup butter
- 2Β½ – 3 cups icing sugar (sifted)
- 2 Tablespoons cocoa powder (sifted)
- 2 teaspoon vanilla essence
Instructions
Cupcake
- Preheat oven to 180Β°C/ 350F
- Mix cocoa and boiling water to make a smooth paste.
- In a bowl dry whisk flour, sugar, baking powder, and bicarbonate of soda.
- In another bowl, mix milk, oil, egg, and vanilla until light and frothy.
- Sift half the flour mixture into the milk mixture and mix well.
- Add cocoa paste and mix well.
- Next, add the remaining flour and mix until just combined.
- Spoon into cupcake cases (half filled)
- Bake about 15-20 minutes, or until toothpick comes out clean.
Chocolate Buttercream Icing
- Place all ingredients in a mixing bowl until smooth and creamy.
- If the buttercream is too stiff add a few teaspoons of milk, or if too soft add more icing sugar or cocoa powder.
