Ingredients

Cupcake Batter

Chocolate Buttercream icing

  • Β½ cup butter
  • 2Β½ – 3 cups icing sugar (sifted)
  • 2 Tablespoons cocoa powder (sifted)
  • 2 teaspoon vanilla essence


Instructions

Cupcake

  1. Preheat oven to 180Β°C/ 350F
  2. Mix cocoa and boiling water to make a smooth paste.
  3. In a bowl dry whisk flour, sugar, baking powder, and bicarbonate of soda.
  4. In another bowl, mix milk, oil, egg, and vanilla until light and frothy.
  5. Sift half the flour mixture into the milk mixture and mix well.
  6. Add cocoa paste and mix well.
  7. Next, add the remaining flour and mix until just combined.
  8. Spoon into cupcake cases (half filled)
  9. Bake about 15-20 minutes, or until toothpick comes out clean.

Chocolate Buttercream Icing

  1. Place all ingredients in a mixing bowl until smooth and creamy.
  2. If the buttercream is too stiff add a few teaspoons of milk, or if too soft add more icing sugar or cocoa powder.
