Homemade Classic Sandwich Bread that’s softer than store-bought. Fluffy inside, golden outside, simple and rewarding

- 3 cups all-purpose flour
- 1/2 cup milk
- 1/2 cup cold water plus up to 2/3 cup hot water (add gradually)
- 4 tbsp melted butter or shortening
- 2 tbsp sugar
- 1 1/4 tsp salt
- 1 packet dry yeast
Instructions
- Proof yeast in warm water with sugar until foamy (about 5 minutes).
- Mix in flour, milk, butter, and salt.
- Add more water gradually until the dough is soft but not sticky.
- Knead 6–8 minutes on a greased surface until smooth and elastic.
- Place in a greased bowl, cover with clingfilm, and let rise 1–2 hours until fluffy.
- Shape into an 8-inch log, place in a greased 8×4-inch loaf pan, and rise again for about 60 minutes, until the dough is 1 inch above the pan.
- Bake at 180°C/350°F for 30–35 minutes, until golden. Tap the bottom; it should sound hollow.
- Cool on a wire rack for at least 30 minutes before slicing.
