Description
Coconut Nests with Jam Centers are soft buttery cookies rolled in coconut and filled with sweet jam centres, perfect for tea time or simple baking days.

- 1 1/2 cups Self-Raising flour
- 1/4 cup sugar
- Pinch of salt
- 1 egg, separated
- 1/2 cup butter, softened
- About 3/4 cup desiccated coconut (for rolling)
- About 1/3 cup of the jam of choice
Instructions
- Preheat your oven to 350⁰F (180⁰C).
- Line a baking tray with parchment paper.
- In a bowl, beat together ½ cup softened butter and ¼ cup sugar until it’s light and a bit fluffy.
- Add the 1 egg yolk (keep the white aside) and mix well until smooth.
- Sift in 1½ cups Self-Raising flour and add a pinch of salt. Mix everything into a soft dough.
- Scoop small portions of dough and roll into little balls, about walnut-sized.
- Using your thumb or the back of a spoon, gently press a small indentation into the centre of each ball. Don’t press all the way through.
- Lightly whisk the reserved egg white and dip each dough ball into the egg white, then roll in the desiccated coconut until nicely coated.
- Place on the prepared tray, leaving a bit of space between each.
- Bake at 350⁰F (180⁰C) for about 15 minutes, or until the edges are just lightly golden. They shouldn’t brown too much.
- Let them cool on the tray for a few minutes, then transfer to a rack to cool completely.
- If the centres puff up while baking, just gently press them down again while still warm.
- Once cooled, spoon a little jam into each centre.
