Description

Coconut Nests with Jam Centers are soft buttery cookies rolled in coconut and filled with sweet jam centres, perfect for tea time or simple baking days.


Ingredients

  • 1 1/2 cups Self-Raising flour
  • 1/4 cup sugar
  • Pinch of salt
  • 1 egg, separated
  • 1/2 cup butter, softened
  • About 3/4 cup desiccated coconut (for rolling)
  • About 1/3 cup of the jam of choice

Instructions

  1. Preheat your oven to 350⁰F (180⁰C).
  2. Line a baking tray with parchment paper.
  3. In a bowl, beat together ½ cup softened butter and ¼ cup sugar until it’s light and a bit fluffy.
  4. Add the 1 egg yolk (keep the white aside) and mix well until smooth.
  5. Sift in 1½ cups Self-Raising flour and add a pinch of salt. Mix everything into a soft dough.
  6. Scoop small portions of dough and roll into little balls, about walnut-sized.
  7. Using your thumb or the back of a spoon, gently press a small indentation into the centre of each ball. Don’t press all the way through.
  8. Lightly whisk the reserved egg white and dip each dough ball into the egg white, then roll in the desiccated coconut until nicely coated.
  9. Place on the prepared tray, leaving a bit of space between each.
  10. Bake at 350⁰F (180⁰C) for about 15 minutes, or until the edges are just lightly golden. They shouldn’t brown too much.
  11. Let them cool on the tray for a few minutes, then transfer to a rack to cool completely.
  12. If the centres puff up while baking, just gently press them down again while still warm.
  13. Once cooled, spoon a little jam into each centre.
