- 170g smoked tuna, shredded
- 1/2 cup grated cheese (plus extra for topping)
- 1 1/2 tbsp mayonnaise
- 1/4 tsp Worcestershire sauce
- Ground black pepper
- 1 cup whole-wheat flour
- 1 cup cornmeal
- 1/2 tsp salt
- 1 1/2 to 2 tsp baking soda
- 2 eggs
- 1 cup buttermilk
- 1 tbsp finely chopped green onion
- 1/2 cup melted butter
Instructions
- Heat oven to 375°F (190°C).
- Spray a 12-cup muffin tin with non-stick spray.
- In a bowl, stir together the tuna, half the cheese, mayo, Worcestershire sauce, and pepper.
- Cover and chill while you make the batter.
- In another bowl, mix flour, cornmeal, salt, and baking soda.
- Add the eggs, buttermilk, green onion, and melted butter.
- Whisk everything until smooth.
- Spoon the batter into each muffin cup, filling about ¾ of the way.
- Gently tap the tin to settle the batter.
- Drop 1 to 2 tablespoons of the tuna mix into the center of each muffin.
- Lightly press it down into the batter.
- Sprinkle the tops with extra cheese.
- Bake for 25–30 minutes, or until golden on top and cooked through.
