Cream-Filled Chocolate Éclairs

Description

Satisfy Your Sweet Tooth with these Cream-Filled Chocolate Éclairs


Ingredients

Scale
  • 110g butter or margarine
  • 1 1/2 cups water
  • 1 Tbsp. Oil
  • A pinch of salt
  • 1 1/2 cups cake flour (sifted)
  • 6 med-sized eggs
  • 500ml fresh cream
  • 2 big slabs of Cadbury milk chocolate

Instructions

  1. Beat the eggs well and refrigerate for a few hours before making the Éclairs.
  2. Preheat the oven to 220C/428F.
  3. In a saucepan, bring the water & butter, salt & oil to a boil.
  4. Boil only until the butter has melted, then take it off the heat & add the flour all at once.
  5. Mix it quickly with a wooden spoon, then put it back on the heat and let it cook for about 1 minute while mixing slowly.
  6. Please take off the heat and let it cool slightly.
  7. Add the mixture into your mixer and start beating on medium speed while pouring the eggs a little at a time.
  8. It must not be too runny.
  9. Once all the eggs are incorporated and mixed thoroughly, pipe them into a piping bag with a fluted nozzle.
  10. On a well-oiled, baking tray or spray & cook pan.
  11. Pipe into logs, keeping space in between to spread.
  12. Bake at 220C/428F for 15 minutes, then lower the heat to 180C/356F & bake for a further 30 minutes.
  13. Remove from the oven and place on a wire rack.
  14. Prick each with a toothpick to release the air.
  15. Let it cool completely before decorating.
  16. Beat the cream with 2 Tbsp. Castor sugar (or to taste) & 2 Tbsp. Cremora (milk powder) stiffly.
  17. Melt the chocolate.
  18. Cut a small hole on the side of the éclair.
  19. Push a thin knife in and twirl it around, making sure all the cells are flattened but do not cut through the outer shell.
  20. Pipe the cream & close the hole with the piece that you’ve cut out.
  21. Cover the top and the cut part with the melted chocolate.
  22. The best.
