Who Else Want’s Crisp Coconut Cookies? I knew it, so get baking and you will be able to enjoy them soon.

- 2 cups self-raising flour
- 125g butter
- 1 1/2 cups desiccated coconut
- 2 cups castor sugar
- 2 extra large eggs
- 1 tsp vanilla essence
- Pinch salt
Instructions
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time.
- Sift flour, and salt and add to butter and sugar mixture and coconut.
- Add vanilla essence.
- Shape the dough into small balls and roll them into castor sugar and place the side up with the castor sugar (I rolled the whole ball in the sugar and pressed it flat).
- Bake in a preheated oven of 180C / 350F for 12-15 minutes.
