Description
Crispy Lemon Rosemary Turkey with golden baked potatoes. Perfect for weeknight or weekend dinners. Easy, flavorful, and full of zesty goodness.

- 2 turkey wings
- 2 turkey drumsticks
- 1/8 cup lemon juice
- 1/8 cup oil
- 1 tbsp dried rosemary
- 1 heaped tbsp minced garlic (more if you love garlic)
- 1 tsp onion powder
- Lots of salt and freshly ground black pepper
- 1-2 tbsp capers
- 2-3 medium potatoes, peeled and sliced
- Extra oil, salt, pepper, and a few drops of lemon juice for potatoes
Instructions
- Grab a big plastic bag and toss in 2 turkey wings, 2 turkey drumsticks, 1/8 cup lemon juice, 1/8 cup oil, 1 tbsp dried rosemary, 1 heaped tbsp minced garlic, 1 tsp onion powder, and LOTS of salt and freshly ground black pepper.
- Seal the bag and squish everything together so the spices get into all the nooks and crannies.
- Pop it in the fridge for at least 2 hours (or overnight if you can).
- Give it a shake now and then.
- While your turkey is marinating, peel and slice 2–3 medium potatoes.
- Toss them with a little oil, salt, pepper, a few drops of lemon juice, and sprinkle some dried rosemary on top.
- Preheat the oven to 380°F (193°C). Empty the turkey from the bag into a baking dish and scatter 1–2 tbsp capers over the top.
- Spread the potatoes in another baking dish. Bake both for about an hour, or until the turkey is golden, and the potatoes are tender.
- You can toss the potatoes halfway if you like them extra crisp.
- Plate your juicy turkey with the roasted potatoes and spoon over any pan juices.
- Simple, bright, and flavorful.
