Crispy Lemon Rosemary Turkey

Description

Crispy Lemon Rosemary Turkey with golden baked potatoes.  Perfect for weeknight or weekend dinners. Easy, flavorful, and full of zesty goodness.


Ingredients

  • 2 turkey wings
  • 2 turkey drumsticks
  • 1/8 cup lemon juice
  • 1/8 cup oil
  • 1 tbsp dried rosemary
  • 1 heaped tbsp minced garlic (more if you love garlic)
  • 1 tsp onion powder
  • Lots of salt and freshly ground black pepper
  • 1-2 tbsp capers
  • 2-3 medium potatoes, peeled and sliced
  • Extra oil, salt, pepper, and a few drops of lemon juice for potatoes

Instructions

  1. Grab a big plastic bag and toss in 2 turkey wings, 2 turkey drumsticks, 1/8 cup lemon juice, 1/8 cup oil, 1 tbsp dried rosemary, 1 heaped tbsp minced garlic, 1 tsp onion powder, and LOTS of salt and freshly ground black pepper.
  2. Seal the bag and squish everything together so the spices get into all the nooks and crannies.
  3. Pop it in the fridge for at least 2 hours (or overnight if you can).
  4. Give it a shake now and then.
  5. While your turkey is marinating, peel and slice 2–3 medium potatoes.
  6. Toss them with a little oil, salt, pepper, a few drops of lemon juice, and sprinkle some dried rosemary on top.
  7. Preheat the oven to 380°F (193°C). Empty the turkey from the bag into a baking dish and scatter 1–2 tbsp capers over the top.
  8. Spread the potatoes in another baking dish. Bake both for about an hour, or until the turkey is golden, and the potatoes are tender.
  9. You can toss the potatoes halfway if you like them extra crisp.
  10. Plate your juicy turkey with the roasted potatoes and spoon over any pan juices.
  11. Simple, bright, and flavorful.
