Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, whisk together balsamic vinegar, olive oil, cumin, garlic powder, and chopped onion.
  3. Place onions in the bottom of a greased roasting pan. Lay chicken on top.
  4. Brush the chicken generously with the vinegar mixture, coating well.
  5. Sprinkle with coarse salt on both sides.
  6. Pour the remaining vinegar mixture inside and around the chicken.
  7. Crack black pepper over the top.
  8. Roast for 1 hour until the skin is crispy and golden, and juices run clear.
  9. Rest for 5 minutes before carving. Serve warm.

Notes:

  • The balsamic caramelizes beautifully, giving a crisp skin without burning.
  • For boneless, skinless chicken breasts, cook for about 30 minutes and sauté onions before baking.
