- 1 fresh whole chicken (±1kg)
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tbsp dry cumin
- 1 tsp garlic powder
- 1/2 onion, chopped
- Coarse salt
- Cracked black pepper
Instructions
- Preheat oven to 425°F (220°C).
- In a mixing bowl, whisk together balsamic vinegar, olive oil, cumin, garlic powder, and chopped onion.
- Place onions in the bottom of a greased roasting pan. Lay chicken on top.
- Brush the chicken generously with the vinegar mixture, coating well.
- Sprinkle with coarse salt on both sides.
- Pour the remaining vinegar mixture inside and around the chicken.
- Crack black pepper over the top.
- Roast for 1 hour until the skin is crispy and golden, and juices run clear.
- Rest for 5 minutes before carving. Serve warm.
Notes:
- The balsamic caramelizes beautifully, giving a crisp skin without burning.
- For boneless, skinless chicken breasts, cook for about 30 minutes and sauté onions before baking.
