These little cookies are easy to make and full of buttery flavor. They make perfect homemade gifts or a cozy tea time snack.

- 3/4 cup / ± 12 tbsp butter, softened
- 1 tsp vanilla essence
- 1/3 cup icing sugar, sifted
- 1 cup self-raising flour, sifted
- 1/2 cup plain flour, sifted
- 1/2 cup custard powder, sifted
Optional filling: jam, lemon curd, or buttercream
Instructions
- Grab a large bowl and beat 180g butter and 1 tsp vanilla essence with 1/3 cup icing sugar until it’s smooth and creamy. Don’t worry if it looks a bit soft; that’s perfect.
- In a separate bowl, sift together 1 cup self-raising flour, 1/2 cup plain flour, and 1/2 cup custard powder. Make sure it’s all light and airy.
- Stir the dry mixture into the butter-sugar mix.
- Bring it together with your hands if it helps, until it forms a soft dough. It should be slightly crumbly but hold together when pressed.
- Roll small balls of dough (about 1 tablespoon each) and place them on a greased or lined baking tray.
- Press each lightly with a fork; don’t flatten too much, or they’ll lose that shortbread texture.
- Bake in a preheated oven at 160°C for 15 minutes.
- Keep an eye on them; they should be lightly golden at the edges, not deep brown.
- Let the cookies cool completely on the tray before handling, as they are very soft and will fall apart.
- You can leave them as singles or sandwich two together with your favorite filling.
