- 3-4 eggs, beaten
- 1/3 cup diced ham
- 1/3 cup diced bell peppers (any color you love)
- 1 small onion, chopped
- 1 teaspoon crushed garlic
- 1 teaspoon paprika
- 1 tablespoon butter
- Salt & pepper, to taste
Instructions
- Crack 3–4 eggs into a bowl, toss in 1 teaspoon paprika, a pinch of salt and pepper, and whisk it all up till nice and frothy.
- Melt 1 tablespoon butter in a nonstick pan over medium heat.
- Add 1/3 cup diced ham, 1/3 cup bell peppers, 1 chopped onion, and 1 teaspoon crushed garlic.
- Sauté for about 3–4 minutes, just until the veggies soften, and the ham gets a light golden edge.
- Scoop the cooked filling out and set it aside for a sec.
- Pour the egg mixture into the same pan; don’t wash it, you want that leftover flavor!
- When the center’s still just a little runny, spoon your ham and veggie filling back on one side of the omelette.
- Gently fold it in half with your spatula and let it cook about a minute per side until the center’s cooked through but still fluffy.
- Slide it out, grab a fork, and enjoy that melty, savory goodness right away.
