Vegetable Curry
- 1 whole chicken (cut into pieces, washed and trimmed)
- 2 large onions, diced
- 2 tbsp olive or vegetable oil
- 2 tbsp garlic and ginger paste
- 2 chopped green chilies
- 2 tsp chili flakes
- 3 tsp Mother-in-Law masala
- 3 tsp turmeric
- 3 tsp leaf masala
- Salt, to taste
- 3 tomatoes, peeled and chopped
- 2 tbsp tomato paste
- 4 large carrots, peeled and sliced
- 5 potatoes, quartered
- 1 small punnet of green beans, washed and trimmed
- Fresh coriander (dhanya) for garnish

Instructions
Vegetable Curry
- Heat oil in a saucepan and sautΓ© the onions until soft.
- Add garlic and ginger paste, green chilies, and all the spices. Cook for 3 minutes.
- Add the chicken pieces and brown them lightly.
- Season with salt.
- Stir in the chopped tomatoes and tomato paste, then cook on low heat for 10 minutes.
- Add the carrots, potatoes, and green beans. Cook slowly for about 40 minutes until the vegetables are tender.
- Add a little boiling water now and then to keep the curry from drying out.
- Garnish with fresh coriander. Serve with roti, basmati rice, or sambals.
Roti
- Mix all ingredients and knead into a smooth dough.
- Roll the dough into a large circle and sprinkle lightly with flour.
- Roll the dough like a Swiss roll and cut into 8 pieces.
- Shape each piece into a ball.
- Roll each ball out flat and fry on a pan, flipping several times until nicely speckled.
- Repeat with all pieces.
- Brush the cooked roti with melted butter and fresh garlic if you like.
