Description
If you love coconut and need a fast, fuss-free treat, these coconut macaroons are the answer. They’re chewy, sweet, and only take a few basic ingredients to make. Plus, the chopped cherries on top give them a pop of color and a little extra flavor
Ingredients
- 3 cups desiccated coconut
- 1 can (385g) sweetened condensed milk
- Chopped green and red cherries
- A bit of extra coconut for rolling
Instructions
- In a big bowl, stir together the desiccated coconut and the full can of condensed milk.
- Mix well until everything sticks together.
- Scoop out small amounts (about the size of a walnut) and roll into balls.
- Then roll each one in some extra coconut for a light coating.
- Press a small piece of cherry on top of each ball.
- Place the macaroons on a greased baking sheet.
- Bake in a 180°C (350°F) oven for about 10 minutes.
- Keep a close eye, they can brown quickly underneath.
Tips:
- Use parchment paper for easy cleanup.
- Swap the cherries for chocolate chips, or leave them out if you prefer a plain version.
- Let the macaroons cool before moving them, they firm up as they sit.
