This Biltong Leek and Sweet Potato Comfort Soup delivers comfort and flavour in one bowl. Easy to prepare, it’s ideal for dinners that feel special without extra effort

- 50 g butter
- 100 g finely sliced biltong (split in half)
- 6 leeks, thinly sliced and washed well
- 1/2 tsp freshly ground coriander seeds
- 1 ml nutmeg
- 3 small sweet potatoes, peeled and cubed
- 1 medium potato, peeled and cubed
- 1.25 L vegetable stock
- ±125 ml cream
- Salt and pepper
- Biltong shavings
- Crumbled blue cheese, optional
Instructions
- Melt the 50 g butter in a big pot over medium heat.
- Add half the 100 g biltong, the washed sliced leeks, ½ tsp coriander, and 1 ml nutmeg. Cook until fragrant.
- Add 3 cubed sweet potatoes and 1 cubed medium potato and stir for a minute.
- Pour in the 1.25 L stock, bring to a gentle boil, then lower the heat.
- Simmer 35–40 minutes, or until all potatoes are tender.
- Carefully blend the hot soup with ±125 ml cream and the remaining biltong.
- Adjust thickness; season with salt and pepper.
- Serve hot with blue cheese and biltong shavings.
