  1. In a large microwave-safe mug, whisk the milk and vinegar. Let it sit for 1–2 minutes (that’s your quick buttermilk).
  2. In a small bowl, stir together the flour, sugar, cocoa powder, baking powder, and salt.
  3. Add the dry mix to the mug with the milk. Pour in oil and food coloring. Whisk until smooth.
  4. Microwave on high for 1 minute 10 seconds. If the center looks undercooked, cook for another 10–15 seconds. Timing depends on your microwave wattage.
  5. The cake will puff up and then sink a little; that’s normal.
  6. Dust with powdered sugar or add whipped cream, then dig in while it’s warm.
