Description
Bake classic French Madeleine Cookies at home with simple ingredients and a hint of lemon. These golden shell-shaped cakes are light, buttery, and ready in under 30 minutes.

- 2 jumbo eggs + 1 egg yolk
- 1/4 cup sugar
- 1/4 cup unsalted butter, melted (plus extra for greasing pan)
- 1 cup all-purpose flour, sifted
- 1/4 tsp baking powder
- 1 tbsp fresh lemon juice
- 1 tsp finely grated lemon zest
- Powdered sugar for dusting
Instructions
- Preheat oven to 200°C (400°F). Grease a Madeleine pan with butter and lightly flour it.
- In a bowl, beat eggs and sugar until pale, thick, and foamy (about 3–4 minutes).
- Stir in lemon juice and zest.
- Sift flour and baking powder, then fold gently into egg mixture.
- Fold in melted butter until just combined. Don’t overmix.
- Chill batter in the fridge for 10–15 minutes.
- Spoon batter into molds, filling each about 90%.
- Bake for 12–14 minutes, until the edges are golden and the centers puff.
- Let cool a few minutes, then tap pan to release. Transfer to a wire rack.
- Dust with powdered sugar before serving, if desired.
