Description

These cupcakes are soft, simple, and perfect for decorating into a Frozen-themed treat. They’re the kind you bake when you want something fun, a little magical, and easy to work with.


Ingredients

  • 2 cups self-rising flour (see note below)
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup butter, softened
  • 3/4 cup sugar (add a bit more if you like them sweeter)
  • 2 eggs, room temperature
  • 1 cup milk, room temperature
  • 1 tsp vanilla essence

Instructions

  1. Preheat your oven to 375⁰F (190⁰C). Line a 12-cup muffin tin with paper liners; blue or white ones work nicely for the theme.
  2. In a bowl, whisk together 2 cups self-rising flour, 1/2 tsp salt, and 2 tsp baking powder. Set aside.
  3. In another bowl, cream 1/2 cup softened butter and 3/4 cup sugar until light and fluffy. It should look pale and a bit airy.
  4. Beat in 2 eggs one at a time, mixing well after each.
  5. Add the flour mixture in batches, alternating with 1 cup milk.
  6. Start and end with the flour. Mix gently, just until combined, so the cupcakes stay soft.
  7. Stir in 1 tsp vanilla essence.
  8. Divide the batter evenly into the liners, filling each about 2/3 full.
  9. Bake for about 18 minutes, or until a toothpick comes out clean and the tops spring back lightly.
  10. Let the cupcakes cool in the pan for 5 minutes, then move them to a rack to cool completely before decorating.

Decorating Tip for Frozen Theme

  1. Once cooled, frost with vanilla buttercream tinted in shades of blue and white.
  2. Add a sprinkle of edible glitter, snowflake sprinkles, or even little toppers for that Frozen look.
