These cupcakes are soft, simple, and perfect for decorating into a Frozen-themed treat. Theyβre the kind you bake when you want something fun, a little magical, and easy to work with.

- 2 cups self-rising flour (see note below)
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cup butter, softened
- 3/4 cup sugar (add a bit more if you like them sweeter)
- 2 eggs, room temperature
- 1 cup milk, room temperature
- 1 tsp vanilla essence
Instructions
- Preheat your oven to 375β°F (190β°C). Line a 12-cup muffin tin with paper liners; blue or white ones work nicely for the theme.
- In a bowl, whisk together 2 cups self-rising flour, 1/2 tsp salt, and 2 tsp baking powder. Set aside.
- In another bowl, cream 1/2 cup softened butter and 3/4 cup sugar until light and fluffy. It should look pale and a bit airy.
- Beat in 2 eggs one at a time, mixing well after each.
- Add the flour mixture in batches, alternating with 1 cup milk.
- Start and end with the flour. Mix gently, just until combined, so the cupcakes stay soft.
- Stir in 1 tsp vanilla essence.
- Divide the batter evenly into the liners, filling each about 2/3 full.
- Bake for about 18 minutes, or until a toothpick comes out clean and the tops spring back lightly.
- Let the cupcakes cool in the pan for 5 minutes, then move them to a rack to cool completely before decorating.
Decorating Tip for Frozen Theme
- Once cooled, frost with vanilla buttercream tinted in shades of blue and white.
- Add a sprinkle of edible glitter, snowflake sprinkles, or even little toppers for that Frozen look.
