- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 tsp baking soda
- 1 tsp allspice
- 2 tsp ground ginger
- 1/2 cup + 1 tbsp butter or margarine (135mL)
- 1 egg
- 1 tsp syrup
Instructions
- Mix the flour, sugar, baking soda, allspice, and ginger in a bowl.
- Melt the butter and stir it into the dry mix. The texture should be crumbly.
- Beat the egg with the syrup, then pour that into the bowl and mix.
- It’ll look like it won’t come together, but keep mixing. It’ll hold when you shape the dough.
- Press dough into a tablespoon (15ml) to shape, then pop them out onto a baking tray.
- Flatten them slightly if you like thinner cookies.
- Bake at 350°F (180°C) for about 14 minutes.
- The bottoms should just start to turn golden.
- Let them cool on a rack; this is where the magic happens, and they crisp up perfectly.
