- 6 slices whole wheat bread
- 2-3 tbsp butter, softened to spread the bread
- 100 g dried cranberries (or raisins, if you prefer)
- 3 eggs
- 2 cups milk
- 4 tbsp sugar (plus a little extra for topping)
- 1 tsp vanilla essence
- 1/2 tsp ground cinnamon (plus extra for topping)
- 1/4 tsp nutmeg
Instructions
- Grease a medium (8×8-inch) ovenproof dish.
- Butter the bread slices, cut them into quarters, and arrange in the dish, butter side up.
- In a bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and nutmeg until well combined.
- Pour the custard mixture over the bread and scatter cranberries evenly.
- Let it sit for 5–10 minutes so the bread soaks up the custard sauce.
- Bake at 180°C (350°F) for 40–45 minutes until golden brown and the custard has set.
- Sprinkle with extra sugar and cinnamon.
- Serve warm with custard or ice cream.
- Leftovers taste great cold or gently reheated.
