Soft eggs tucked into juicy meatloaf create Gooey Scotch Eggs Meatloaf. Perfect for cozy dinners or special family meals.

Instructions
- Preheat your oven to 180°C/350°F.
- In a large bowl, mix 750g minced beef, 1 large, chopped onion, 2 cloves chopped garlic, 1–2 tbsp chopped parsley, a dash of salt, a dash of pepper, 3 tbsp chutney, 3 tbsp tomato sauce, 1 tbsp Worcestershire sauce, ¼ tsp smoked paprika, and 3 lightly beaten eggs until everything is well combined. Don’t worry if it’s a little sticky; that’s perfect, and it’s supposed to be.
- Lightly oil an ovenproof loaf dish.
- Take half of the meat mixture and press it evenly into the bottom of the dish.
- Line up the 6 soft-boiled eggs down the middle of the dish. They should still wobble a bit.
- Cover the eggs with the remaining meat mixture, gently pressing to seal the edges.
- Bake at 180°C for about 45 minutes, or until the meat is cooked through and the top is lightly golden.
- Let the meatloaf cool for a few minutes, then carefully turn it out onto a serving plate.
- Slice, serve, and enjoy the gooey egg surprise!
