Description

Soft eggs tucked into juicy meatloaf create Gooey Scotch Eggs Meatloaf. Perfect for cozy dinners or special family meals.


Ingredients

  • 6 soft boiled eggs, shelled
  • 750g minced beef
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1-2 tbsp chopped parsley (depending on taste)
  • A dash of salt
  • A dash of pepper
  • 3 tbsp chutney
  • 3 tbsp tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1/4 tsp smoked paprika
  • 3 lightly beaten eggs

Instructions

  1. Preheat your oven to 180°C/350°F.
  2. In a large bowl, mix 750g minced beef, 1 large, chopped onion, 2 cloves chopped garlic, 1–2 tbsp chopped parsley, a dash of salt, a dash of pepper, 3 tbsp chutney, 3 tbsp tomato sauce, 1 tbsp Worcestershire sauce, ¼ tsp smoked paprika, and 3 lightly beaten eggs until everything is well combined. Don’t worry if it’s a little sticky; that’s perfect, and it’s supposed to be.
  3. Lightly oil an ovenproof loaf dish.
  4. Take half of the meat mixture and press it evenly into the bottom of the dish.
  5. Line up the 6 soft-boiled eggs down the middle of the dish. They should still wobble a bit.
  6. Cover the eggs with the remaining meat mixture, gently pressing to seal the edges.
  7. Bake at 180°C for about 45 minutes, or until the meat is cooked through and the top is lightly golden.
  8. Let the meatloaf cool for a few minutes, then carefully turn it out onto a serving plate.
  9. Slice, serve, and enjoy the gooey egg surprise!
