Description

These Cheesy Ham Pockets are loaded with flavor and gone in minutes. Think creamy cheese, smoky ham, and flaky puff pastry.


Ingredients

  • 200g chopped ham
  • 3/4 cup grated cheddar cheese
  • 2 tsp capers, or 50g sun-dried tomatoes, or use both
  • 90g herb and garlic cream cheese
  • 400g puff pastry, thawed
  • 1 egg, beaten (add a splash of milk if you like)

Instructions

  1. Heat your oven to 425°F (220°C) and line a baking tray with parchment paper.
  2. Mix the ham, cheddar, capers/sun-dried tomatoes, and cream cheese in a bowl.
  3. Roll out the pastry and cut out circles about 5 inches wide.
  4. Place a spoonful of the ham mix in the middle of each circle.
  5. Close each one into a pocket and press the edges well. 
  6. Flip them so the seam is on the bottom.
  7. Brush with egg and pop them onto the tray.
  8. Bake for around 15 minutes, or until they’re puffed up and golden brown.
