- 350g Bacon
- 15g Butter
- 2 Onions (chopped)
- 500g Carrots (thinly sliced & parboiled)
- 150g Cheese
- 2 tins Plum tomatoes
- Salt & Pepper to taste
Instructions
- Cut the bacon bit into strips
- Melt the butter and gently sauté the onions & bacon, for about 10 minutes.
- Butter an oven-proof dish.
- Layer the mixture of bacon, onions, carrots, and tomatoes as well as the grated cheese finishing with a layer of cheese.
- Bake 190C/375F for 50–60 minutes.
- Serve hot with crusty bread or jacket potatoes.
Freezing instructions
- Layer up the ingredients when they are all cold. Then freeze.
- You can reheat from frozen: Place it into a preheated oven at 200C/395F, with the lid on or covered tightly with tinfoil.
- After 30 minutes remove the lid/foil & bake for another 30 minutes
