Ingredients

  • 1 onion, sliced
  • A good amount of finely chopped garlic
  • 2 cups sliced mushrooms
  • 12 Roma tomatoes, diced
  • Salt & pepper
  • Italian seasoning
  • Chili powder

Instructions

  1. Heat some butter or margarine in a big pan.
  2. Add the onion and garlic and cook until soft.
  3. Toss in the mushrooms and let them cook through.
  4. Add the tomatoes, a pinch of salt and pepper, Italian herbs, and chili powder. Stir well.
  5. Cover and let it simmer for 20–30 minutes.
  6. Add a splash of water if it looks too thick; this should stay nice and saucy.
  7. Taste it. Adjust the seasoning if needed.
  8. Make 8 little spaces in the sauce and crack an egg into each one.
  9. Cover and cook for about 5–8 minutes, until the eggs are done to your liking.
  10. I gave the pan a little shake to check, and they stayed soft and runny in the middle, just how I like them.
  11. Serve it hot over fresh bread and add a crunchy cucumber salad on the side if you want a bit of cool freshness.
