- 1 onion, sliced
- A good amount of finely chopped garlic
- 2 cups sliced mushrooms
- 12 Roma tomatoes, diced
- Salt & pepper
- Italian seasoning
- Chili powder
Instructions
- Heat some butter or margarine in a big pan.
- Add the onion and garlic and cook until soft.
- Toss in the mushrooms and let them cook through.
- Add the tomatoes, a pinch of salt and pepper, Italian herbs, and chili powder. Stir well.
- Cover and let it simmer for 20–30 minutes.
- Add a splash of water if it looks too thick; this should stay nice and saucy.
- Taste it. Adjust the seasoning if needed.
- Make 8 little spaces in the sauce and crack an egg into each one.
- Cover and cook for about 5–8 minutes, until the eggs are done to your liking.
- I gave the pan a little shake to check, and they stayed soft and runny in the middle, just how I like them.
- Serve it hot over fresh bread and add a crunchy cucumber salad on the side if you want a bit of cool freshness.
