  1. Preheat the oven to 380F/195C.
  2. Whisk the eggs (a regular one will do, but feel free to use an electric beater).
  3. Add the yogurt, vanilla & Monk Fruit sugar, and mix.
  4. Add almond flour and baking powder and mix.
  5. Carefully fold in the blueberries.
  6. Divide batter into 15 muffin cavities by using an ice cream scoop to measure in even portions.
  7. Bake for ±25 minutes until baked through (test with a toothpick in the center) and golden.
