- 1 cup blueberries
- 288 g – 3 cups almond flour
- 4 eggs
- 85g – 2/3 cup Monk Fruit sugar substitute
- 141.75 g – 5 oz of Plain Greek yogurt
- 14 g – 1tbs baking powder
- 5 ml -1 tsp vanilla
Instructions
- Preheat the oven to 380F/195C.
- Whisk the eggs (a regular one will do, but feel free to use an electric beater).
- Add the yogurt, vanilla & Monk Fruit sugar, and mix.
- Add almond flour and baking powder and mix.
- Carefully fold in the blueberries.
- Divide batter into 15 muffin cavities by using an ice cream scoop to measure in even portions.
- Bake for ±25 minutes until baked through (test with a toothpick in the center) and golden.
