Description
This Keto Cheesy Bacon Loaded Cauliflower is cozy, rich, and exactly what you want when comfort food is calling. It’s simple, forgiving, and honestly hard to mess up, even on a busy night.

- 1 large head of cauliflower, cut into florets
- 1 1/2 cups sharp cheddar cheese (keep 1/4 cup aside)
- 3/4 cup sour cream, room temperature
- 4 tbsp butter, melted
- 1/2 tsp crushed garlic, fresh or store-bought
- 1/2 tsp onion powder
- 1/4 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1 cup cooked bacon, crumbled or bacon bits
- 1/4 cup sliced green onions
Instructions
- Preheat your oven to 400°F and lightly grease a baking dish so nothing sticks later.
- Bring a large pot of salted water to a boil.
- Add 1 large head of cauliflower florets, and cook for 8 to 10 minutes until fork-tender but not mushy.
- Drain well, then let it sit to dry so you don’t end up with watery cauliflower.
- OR place the florets in a steamer and steam for approximately 8 minutes, depending on your steamer. The florets should still be crisp, as you will bake them later.
- Transfer the drained cauliflower to the prepared baking dish.
- I left the florets chunky as is, but if you like, gently mash them with a fork to make them potato-style, or mash ½ and leave ½ chunky, but it’s totally up to you.
- In a bowl, mix ¾ cup sour cream, 4 tbsp melted butter, ½ tsp crushed garlic, ½ tsp onion powder, ¼ tsp salt, and ¼ tsp freshly ground black pepper until smooth.
- Spoon this over the cooked or steamed cauliflower (must be dry) and gently stir so everything gets coated.
- Sprinkle 1¼ cup (more if you wish) of the shredded sharp cheddar cheese evenly over the top, then add 1 cup cooked crumbled bacon or bacon bits.
- Bake uncovered for 15–20 minutes until bubbly and hot through.
- Pull it out, sprinkle on the remaining ¼ cup of cheddar cheese, and pop it back into the oven for 5 more minutes until melted and lightly golden.
- Remove from the oven and finish it off with ¼ cup sliced green onions and serve warm.
