Simple, healthy, and delicious, Keto Creamy Salmon with Spinach

- 90 g Salmon Fillet, raw
- 15 g Onion 1/4 small, chopped
- 15 g Spinach 1/2 cup
- 3 g Garlic 1 clove, minced
- 5 g Parmesan Cheese 1 tbsp, grated
- 2 pinches of Salt
- 2 pinches Ground Black Pepper
- 70 g Cherry Tomato 1/2 cup (Optional, as I do not eat cooked/warm tomatoes - I prefer it on the side)
- 10 g Heavy Cream, 36% fat, 1 tbsp
- 125 g Vegetable Broth or Fish Broth 1/2 cup
- 2 pinches Oregano dried
- 2 pinches Basil, dried
- 15 g Olive Oil, 1 tbsp
Instructions
- Season salmon fillet with salt, ground black pepper, dried oregano, and dried basil.
- Add the salmon fillet to a frying pan with half the olive oil over medium heat.
- Cook for 2 min on each side and set aside. Do not overcook as it will go back into the pan**
- In the same frying pan heat the remaining olive oil over medium-high heat and add onion, garlic, cherry tomatoes (optional), and baby spinach together with the heavy cream, and sprinkle Parmesan cheese.
- Season with a pinch of salt, ground black pepper, dried basil, and dried oregano.
- Sauté, stirring occasionally. Continue to cook to reduce and till it starts to thicken up.
- Return the salmon fillet ** to the above mixture.
- Cover the frying pan with a lid and simmer for 2 minutes.
- Be careful not to overcook the salmon.
- In a serving bowl, serve creamy salmon.
- Feel free to garnish with fresh herbs or sprouts of your choice. Enjoy!
