Instructions

  1. Beat the eggs in a bowl.
  2. Add grated Parmesan cheese, black pepper, and cayenne pepper if you like it spicy. You can use your favorite spices if you want**. Taste it and add more seasoning if needed.

  3. Put olive oil in a frying pan and heat it.
  4. Pour the egg and cheese mixture into the pan, spreading it out evenly.
  5. Cover the pan with a lid and let the eggs cook on low heat for 3–5 minutes until golden brown.
  6. Take the pan off the heat.
  7. Carefully move the pancake onto a plate using a spatula.
  8. Serve it with cherry tomatoes on the side and enjoy!
