Description

These Chicken Fajita Lettuce Wraps are fresh, a little smoky, and honestly just easy to throw together on a busy evening. You’ve got juicy chicken, bright lime, and crunchy veg all wrapped up in crisp lettuce, nothing fussy.


Ingredients

  • 3 to 4 chicken breasts, sliced into strips
  • 1 large red onion, sliced into strips
  • 3 mixed bell peppers, sliced into strips
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp avocado oil
  • 1 avocado, chopped
  • 2 to 3 limes, juiced (plus extra for serving)
  • Salt and pepper, to taste
  • 1 head lettuce, leaves separated, washed and dried
  • 1 to 2 tbsp extra oil, for sautΓ©ing
  • 2 tbsp chopped coriander or cilantro, for garnish

Instructions

  1. Slice the 3 to 4 chicken breasts into even strips so they cook evenly. Set aside.
  2. In a medium bowl, mix 1 tbsp avocado oil, juice of 1 lime, 1 tsp garlic powder, 1 tsp ground cumin, 1 tsp smoked paprika, plus a good pinch of salt and pepper.
  3. Heat a heavy pan over medium-high heat and add a drizzle of extra oil.
  4. Cook the chicken in batches, so it browns instead of steaming, about 4 to 5 minutes per batch, until cooked through. Set aside and keep warm.
  5. In the same pan, add another small splash of oil if needed.
  6. Toss in the sliced 1 large red onion and 3 mixed bell peppers.
  7. SautΓ© for about 3 to 4 minutes until just softened but still a bit crisp. Season lightly with salt and pepper.
  8. Return the cooked chicken to the pan with the vegetables.
  9. Squeeze in a bit more lime juice and toss everything together for about 1 to 2 minutes so it’s all warmed through and coated.
  10. Lay out the lettuce leaves from 1 head of lettuce and spoon the chicken and veggie mixture into each leaf.
  11. Top with the chopped avocado, sprinkle over 2 tbsp chopped coriander or cilantro, and finish with extra lime juice to taste.
  12. Serve right away with extra lime wedges on the side.Β
