Ingredients

Scale
  • 1 lb. boneless chicken breast, cubed 1/2 ”
  • 8 medium red potatoes, diced 1/2”
  • 1/4 Cup olive oil
  • 2 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 1 tbs. smoked paprika
  • 2 tbs. garlic powder
  • 3 tbs. hot sauce (Chipotle Cholula if you don’t want it too hot but any other kind of hot sauce such as Sriracha)

Topping

  • 2 cups grated cheddar
  • 1/2 lb bacon, diced
  • 1/2 cup green (spring) onion, chopped

Garnish

  • Sour cream
  • Diced tomatoes

Instructions

  1. While preparing other ingredients, put bacon into an air fryer at 210 deg until crispy.
  2. Remove and put on a paper towel and chop into little pieces for later.
  3. In a large bowl, combine the olive oil, salt, pepper, paprika, garlic powder, and hot sauce.
  4. Add the potatoes and chicken and stir to coat evenly.
  5. Place the potatoes & chicken into the air fryer bowl and cook at 200 deg for 20-25 minutes, stirring occasionally, until cooked through and browned and crispy on the outside.
  6. Once potatoes & chicken are done top with the cheddar, spring onions, and bacon and air fry for another 5 minutes or until the cheddar has melted.
  7. Serve with diced tomatoes and a dollop of sour cream and diced tomatoes
