Comfort food made easy with Mayonnaise Baked Chicken and Fried Rice
Ingredients

For the Chicken
- 6-8 chicken pieces (your choice)
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp chicken spice
- 1 tsp Cajun spice
- 1 tbsp Worcestershire sauce
- 1 cup mayonnaise
- 1/2 cup Mrs. Balls chutney (or similar fruit chutney)
- 1/4 cup tomato sauce
For the Roast Potatoes
- 5 potatoes, halved
- 1 chicken stock cube
- Salt and pepper, to taste
- 1 tsp potato spice (or paprika/garlic salt mix)
- 2 tbsp cornstarch
- A little egg yellow powder (optional)
For the Chinese Egg Fried Rice
- 1/2 cup frozen peas
- 1/4 cup frozen diced carrots
- 2 1/2 cups cooked rice (best if made the day before)
- 3 eggs, lightly beaten with a splash of water
- Salt and pepper
- 3 spring onions, chopped
- 100 g bean sprouts
- 1 tsp salt
- 1 tsp light soy sauce
- 1 tsp sesame oil
- 1/2 tbsp cooking oil
Instructions
Chicken
- Wash and dry the chicken pieces.
- Season with salt, pepper, chicken spice, and Cajun spice.
- In a bowl, mix mayonnaise, chutney, tomato sauce, and Worcestershire sauce.
- Coat the chicken well and let it sit for 10 minutes.
- Preheat oven to 180°C (350°F).
- Heat a little oil in a baking dish while the oven warms up.
- Place the chicken into the hot dish, pouring the marinade over the top.
- Bake for 35–45 minutes until golden and cooked through.
Roast Potatoes
- Place potato halves in cold water with a stock cube.
- Bring to a boil and cook until just tender. Drain well.
- Season with salt, pepper, and potato spice.
- Sprinkle with cornstarch mixed with a little egg yellow powder. Shake off excess.
- Add potatoes to the baking dish with the chicken and roast until golden and crispy.
Chinese Egg Fried Rice
- Heat ½ tbsp oil in a wok.
- Add peas and carrots with a pinch of salt.
- Stir-fry for 1 minute and remove.
- Add cooked rice, stir for 1 minute, then remove.
- Add bean sprouts, stir-fry for 1 minute, then remove.
- Pour eggs into the wok, scramble gently, and push to the sides.
- Add rice, sprouts, peas, and carrots back in.
- Mix everything with salt, soy sauce, and sesame oil.
- Garnish with chopped spring onions.
