This no-bake cheesecake is rich, creamy, and ready in minutes. No oven needed, just a microwave!

Crust:
- 1 pack ginger biscuits, crushed
- 2 tbsp melted butter
Filling:
- 250ml plain full-cream yogurt
- 250ml mascarpone cheese
- 1 tin (397g) condensed milk
Optional extras:
- A handful of dried cranberries
- Chopped pecan nuts for topping
Instructions
- Mix the crushed biscuits with melted butter.
- Press the mixture into the bottom of your serving bowl to make a firm base.
- Sprinkle some dried cranberries over the crust for a pop of sweet-tart flavor.
- In a bowl, stir together the yogurt, mascarpone, and condensed milk until smooth.
- Pour this mixture over the crust.
- Place the bowl in the microwave and cook on HIGH for 4 minutes.
- Let it cool, then pop it in the fridge until set and chilled.
- Before serving, sprinkle with chopped pecans if you like a little crunch.
