Description

This no-bake cheesecake is rich, creamy, and ready in minutes. No oven needed, just a microwave!


Ingredients

Crust:

  • 1 pack ginger biscuits, crushed
  • 2 tbsp melted butter

Filling:

  • 250ml plain full-cream yogurt
  • 250ml mascarpone cheese
  • 1 tin (397g) condensed milk

Instructions

  1. Mix the crushed biscuits with melted butter.
  2. Press the mixture into the bottom of your serving bowl to make a firm base.
  3. Sprinkle some dried cranberries over the crust for a pop of sweet-tart flavor.
  4. In a bowl, stir together the yogurt, mascarpone, and condensed milk until smooth.
  5. Pour this mixture over the crust.
  6. Place the bowl in the microwave and cook on HIGH for 4 minutes.
  7. Let it cool, then pop it in the fridge until set and chilled.
  8. Before serving, sprinkle with chopped pecans if you like a little crunch.
