Description

Light, tangy, and irresistibly creamy, this Mile High Lemon Meringue Pie with a biscuit crust is the perfect balance of sweet and tart. A true showstopper dessert that’s easier than it looks


Ingredients

  • 1 1/2 packets Tennis Biscuits, crushed
  • 1/2 cup melted Stork margarine (or butter if you prefer)
  • 2 cans sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 tsp lemon essence
  • 4 large egg whites
  • 2 tbsp caster sugar

Instructions

  1. Preheat your oven to 180°C / 350°F and spray your baking dish or pie tin with non-stick spray.
  2. In a mixing bowl, combine 1½ packets of crushed Tennis Biscuits with ½ cup melted Stork margarine.
  3. Mix until the crumbs are coated and slightly sticky.
  4. Press the mixture into the base and up the sides of your dish using the back of a spoon.
  5. Pop it into the freezer for 10 minutes to set while you prepare the filling.
  6. In another bowl, beat together 2 cans condensed milk, 4 egg yolks, ½ cup lemon juice, lemon zest, and 1 tsp lemon essence.
  7. Mix until smooth and creamy!
  8. Pour the lemon filling into your chilled crust and bake for about 20 minutes, just until it’s slightly firm around the edges.
  9. While the pie cools for a few minutes, beat 4 egg whites until they’re foamy.
  10. Slowly add 2 tbsp caster sugar, one spoon at a time, and keep beating until stiff peaks form.
  11. Spoon the meringue over the warm filling, spreading it right to the edges to seal it.
  12. Use a fork or spatula to create those lovely peaks that brown beautifully in the oven.
  13. Pop the pie back in the oven for about 5 minutes, or until the meringue is golden brown on top.
  14. Let it cool completely before slicing.
  15. Chill it in the fridge if you like it firm, or dive in while it’s still a little warm and gooey.
