Description

In need of some comfort food and this juicy meatloaf ticked all the boxes, with yummy IP Garlic Mashed Potatoes and a spicy Monkeygland Sauce. No leftovers!

For the glaze

IP Garlic Mashed Potatoes

Monkey Gland Sauce

  • 2 tbsp. oil
  • 1 large onion, diced
  • 12 chilies, chopped
  • 2 cloves garlic, finely chopped
  • 2 large tomatoes, skinned and finely diced
  • 1 cup tomato sauce
  • 1/2 cup Worcestershire sauce
  • 3/4 cup chutney
  • 1/4 cup brown sugar
  • 1 tbsp. Dijon mustard
  • 2 tbsp. vinegar
  • 12 tsp hot sauce / Tabasco (optional)
  • Salt and pepper to taste
  • 1 tsp crushed chili flakes (optional)
  • 1/2 cup water or as needed

Instructions

Meatloaf

  1. Preheat the oven to 180 degrees C
  2. Lightly grease a 9×13 pan.
  3. In a large mixing bowl, knead together the ground beef, onion, breadcrumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes.
  4. Shape the meat into a loaf and put it into the prepared pan.
  5. Bake in the for 45 minutes.
  6. In the meantime, whisk up the glaze mixture in a small bowl.
  7. Pour it over the hot meatloaf and smooth over with the back of a spoon.
  8. Increase the oven temperature to 200 degrees C and bake for an additional 15 minutes.

IP Garlic Mashed Potatoes

  1. Add the potatoes, the stock, and the garlic (in that order) to the Instant Pot and hit “Pressure Cook” High Pressure for 6 minutes.
  2. Quick release when done.
  3. Drain the stock.
  4. Sprinkle baking powder
  5. Using a potato masher, mash the potatoes up in the pot.
  6. Add in the butter, cream cheese, garlic salt, pepper, and Parmesan cheese (if using)
  7. Add the cream until you get the consistency you like.
  8. Stir until well combined.
  9. Add parsley or chives (optional

Monkey Gland Sauce

  1. Heat oil in a heavy-bottomed pot and sauté onions and chili until soft.
  2. Add garlic and fry until fragrant.
  3. Add tomatoes and cook until broken down.
  4. Add remaining ingredients and simmer for 30 minutes adding water as needed
