Description
A warm comforting bowl of Beef Harira which is a Moroccan Tomato Soup with Chickpeas and Lentils. Perfect winter warmer meal which I served with a robust sourdough.

- 1kg Beef (cut into pieces)
- 6-8 Baby Carrots (diced)
- 1 Stalk Celery (diced)
- 1 Large Onion (chopped)
- 1 Teaspoon Ground Cinnamon
- 1 Teaspoon Ginger (grated)
- 1 Teaspoon Garlic (grated)
- 1 Teaspoon Paprika
- 2-4 cups Beef Stock/Broth
- 1/4 cup Brown Lentils
- 1 Can Chickpeas (drained)
- 6 Tomatoes (diced)
- Salt to taste
- Oil (browning)
Tadouira
- 1/2 cup Chickpea Flour
- 1 cup of Cold Water
- 1 Tablespoon Tomato Paste
Instructions
- Heat oil and brown meat in batches.
- In the same pot, add onion, celery, and spices.
- Allow it to cook for a few minutes then add the beef, lentils, and stock to the pot.
- Cook till meat and lentils are tender (add more stock if necessary as it cooks).
- Once the meat is tender, add the carrots and tomatoes and cook till the vegetables have softened.
- Mix all the ingredients, chickpea flour water, and tomato paste for the tadouira together then pour into the soup, add the chickpeas and allow it to simmer for about 5 minutes until the soup has thickened. ste
- Serve with a squeeze of lemon juice and enjoy!!
