Moroccan Cauliflower and Lentils
- 1 medium yellow onion, diced
- 1 clove of garlic, finely chopped
- 1 1/2 heaping tablespoons of Moroccan spice blend (recipe follows)
- Pinch of red pepper flakes
- 1/2 large head of cauliflower or 2 1/2 cups
- 1 cup cooked French lentils
- 1 1/2 cups or 1 can of crushed or diced tomatoes
- 1 1/2 cups water
- Olive oil
- Salt & Pepper
- Fresh coriander (optional)
Moroccan Spice Blend:
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 3/4 teaspoon black pepper
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cayenne
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cloves
Instructions
Moroccan Cauliflower and Lentils
- Heat a good drizzle of olive oil in a big pot over medium-high heat.
- Toss in the onion and cook for 3–4 minutes until it softens and smells amazing.
- Add the garlic and let it cook for just one more minute.
- Stir in that Moroccan spice blend**. Make sure it coats the onions and garlic.
- Let it toast for a minute or two, to let the flavors mingle
- Pour in the tomatoes and water and bring everything to a boil.
- Add the cauliflower and lentils, then let them come to a boil.
- Turn the heat down, cover it up, and let it simmer for 15–20 minutes.
- You’re looking for tender cauliflower that still has a little bite.
- Serve it up. Spoon this onto a plate as a side, or make it a full meal over rice or couscous.
- Sprinkle with fresh coriander if you’re feeling fancy.
