Mustard Peppered Beef

Ingredients

Units Scale

  • 2kg beef fillet
  • 1 tsp kosher salt
  • 1 tbsp cracked black peppercorns.
  • 1/2 tsp rosemary
  • 1 tsp lemon pepper
  • 1 tbsp grainy mustard
  • 3 large potatoes
  • 1 tbsp Vegeta

Instructions

  1. On a plate mix the kosher salt, cracked black peppercorns, rosemary, and lemon pepper
  2. Mix and roll and coat the beef in the above mixture.
  3. Smear the grainy mustard on top of the beef.
  4. Put into prepared roasting pan.
  5. Preheat oven to 200C/400F.
  6. I did 40 minutes for a nice pinkish middle then took it out, cut my slices, and returned it to the oven as the rest of the family who wanted it cooked more.

Potato wedges

  1. Cut 3 large potatoes into wedges (or roast potatoes).
  2. Microwave with 1 tbsp Vegeta (Aromomix/Aromat/vegetable stock powder) for 10 minutes. Drain. When dry.
  3. Dust with corn flour and toss off excess flour.
  4. Place around beef.
  5. Dust with a sprinkling of paprika.
  6. Bake according to preference i.e. medium-well/rare or well done.
  7. Don’t worry the potatoes will work out fine.
