- 2kg beef fillet
- 1 tsp kosher salt
- 1 tbsp cracked black peppercorns.
- 1/2 tsp rosemary
- 1 tsp lemon pepper
- 1 tbsp grainy mustard
- 3 large potatoes
- 1 tbsp Vegeta
Instructions
- On a plate mix the kosher salt, cracked black peppercorns, rosemary, and lemon pepper
- Mix and roll and coat the beef in the above mixture.
- Smear the grainy mustard on top of the beef.
- Put into prepared roasting pan.
- Preheat oven to 200C/400F.
- I did 40 minutes for a nice pinkish middle then took it out, cut my slices, and returned it to the oven as the rest of the family who wanted it cooked more.
Potato wedges
- Cut 3 large potatoes into wedges (or roast potatoes).
- Microwave with 1 tbsp Vegeta (Aromomix/Aromat/vegetable stock powder) for 10 minutes. Drain. When dry.
- Dust with corn flour and toss off excess flour.
- Place around beef.
- Dust with a sprinkling of paprika.
- Bake according to preference i.e. medium-well/rare or well done.
- Don’t worry the potatoes will work out fine.
