Description

Homemade Peanut Butter Easter Egg Delights make your holiday extra sweet. Chocolatey, creamy, and satisfying in every bite. Share these eggs with friends or enjoy as a solo treat.


Ingredients

  • 16 oz icing sugar
  • 1 cup peanut butter (plain ground peanuts; if using sweetened, reduce sugar)
  • 1/4 cup Earth Balance for vegan
  • 1-4 tbsp soy milk
  • About 16 squares of baking chocolate (70% dark works well)
  • 2 tbsp vegetable shortening

Instructions

  1. In a bowl, mix 16 oz icing sugar, 1 cup peanut butter, and 1/4 cup margarine. You’ll need to really get in there; hands-on mixing works best.
  2. Slowly add 1–4 tbsp milk just until the mixture holds together.
  3. Be careful not to overdo it or the eggs won’t keep their shape.
  4. Shape the mixture into egg forms.
  5. Plastic Easter egg molds are perfect for this. Pop them in the fridge to firm up while you prep the chocolate.
  6. Melt 16 squares of baking chocolate with 2 tbsp vegetable shortening in a double boiler. Stir until smooth.
  7. Spread a few drops of chocolate on the flat end of each egg and freeze to set.
  8. Once set, pop the eggs out of the molds, spear with a toothpick, and dip the top in the chocolate.
  9. Place on a parchment-lined baking sheet and return to the freezer.
  10. After chocolate firms, wrap in plastic wrap or Easter foil, hide, and enjoy watching the magic happen.

Tip: The eggs are surprisingly smooth and just sweet enough; the peanut butter flavor isn’t overpowering.
