  • Sliced beets
  • Sliced Golden Delicious apples
  • Sliced celery
  • Potatoes, peeled and quartered
  • Whole cloves (to stud the pork)

For the Glaze:


Instructions

  1. Place your pork loin in a roasting pan and surround it with slices of beets, apples, and celery.
  2. Use as much or as little as you like, it’s all about balance.
  3. Stick a few whole cloves into the pork for a subtle, aromatic kick.
  4. Drizzle lightly with oil and season with salt and pepper.
  5. In a separate pan, toss the peeled and quartered potatoes with seasoning salt and a bit of oil.
  6. Spread them out to roast evenly.
  7. Combine the glaze ingredients: apricot jam, garlic, oil, salt, pepper, and Italian seasoning in a small bowl.
  8. Baste the pork loin generously with the glaze, keeping any extra handy for later.
  9. Bake everything at 400°F (200°C) for approximately 30 minutes, or until your preferred doneness.
  10. You can brush more glaze over the pork midway or save it for a glossy finish after baking.
