Instant Pot and Air Fryer Pork Roast and Potatoes

Description

Sunday lunch no longer should be a long-drawn-out chore with an Instant Pot and Air Fryer. This Pork Roast and Potatoes was done in no time.


Ingredients

Units Scale
  • 2kg Pork roast
  • 1 onion quartered

Marinade

Air Fried Roast Potatoes

Cauliflower and Cheese Sauce

  • 1 small head of cauliflower
  • Vegeta or Aromat seasoning to taste
  • 1/4 cup of water

Cheese Sauce

  • 2 cups half and half or milk
  • 1 tbsp. cornstarch
  • 1 tbsp. butter
  • 2 cups grated cheddar cheese

Instructions

IP Pork Roast

  1. Using a sharp knife make slits in Pork.
  2. Rub in the marinade.
  3. Set IP on sauté.
  4. Add enough oil to cover the bottom of the pot.
  5. When hot add Pork and brown on both sides.
  6. Add the onion and chicken stock.
  7. Press cancel, then High Pressure for 18 minutes.
  8. Allow to naturally release for 15 minutes.
  9. Remove the rind, wipe dry with a paper towel, sprinkle some salt, and air fry with potatoes.
  10. Return IP to sauté.
  11. When liquid bubbles mix 1 tbsp Bisto or cornstarch with 2 tbsp water and add to make a nice thick gravy.
  12. When thick add 1 tsp butter.

Air Fried Roast Potatoes

  1. 3 potatoes, washed, peeled, and cut according to preference.
  2. Parboil in the microwave for 7 minutes.
  3. Drain.
  4. Season according to preference by adding 1 tbsp (12.5 ml) olive oil.
  5. Air fry at 190C / 375F for 20 minutes turning halfway (add the rind of Pork then).

Cauliflower and Cheese Sauce

  1. Cut Cauliflower into florets.
  2. Sprinkle the Vegeta (aromat), and ¼ cup (62.5 ml) of water.
  3. Microwave in a glass bowl covered with cling wrap (pierced) for 5 minutes.
  4. Drain In colander until dry.
  5. Return to an ovenproof dish.

Microwave Cheese Sauce

  1. In a glass jug, microwave the half and half and cornstarch on high for 2 minutes.
  2. Stir with a fork to loosen cornstarch stuck at the bottom.
  3. Microwave another 1-2 minutes until thick.
  4. Add, salt, pepper a dash of mustard powder, butter, and cheese.
  5. Stir until cheese has melted.
  6. Add a sprinkling of nutmeg.
  7. Pour over cauliflower add extra cheese and bake in preheated oven until golden.
