- 1 Large Leek
- 2–3 Large Potatoes
- 1 Stalk Celery
- 500ml Chicken Broth
- 1 tsp (5 ml) Dried Thyme
- 1/2 cup (125 ml) Cream
- 250g Butter
- 2 Cloves Garlic (grated)
- Salt & Pepper to taste
- Topped with Prosciutto (optional)
- Spring Onion (garnish)
Instructions
- Thinly slice the leeks and celery.
- Melt the butter in a pan.
- Cook the celery, thyme, leeks, and garlic in the butter till soft (no color).
- Peel and dice potatoes.
- Boil the potatoes in stock till tender.
- Add to the leek mixture.
- Pour in the cream and blend.
- Adjust seasoning.
- Garnish, serve warm, and enjoy.
