Units Scale

  • 1 Large Leek
  • 23 Large Potatoes
  • 1 Stalk Celery
  • 500ml Chicken Broth
  • 1 tsp (5 ml) Dried Thyme
  • 1/2 cup (125 ml) Cream
  • 250g Butter
  • 2 Cloves Garlic (grated)
  • Salt & Pepper to taste
  • Topped with Prosciutto (optional)
  • Spring Onion (garnish)


  1. Thinly slice the leeks and celery.
  2. Melt the butter in a pan.
  3. Cook the celery, thyme, leeks, and garlic in the butter till soft (no color).
  4. Peel and dice potatoes.
  5. Boil the potatoes in stock till tender.
  6. Add to the leek mixture.
  7. Pour in the cream and blend.
  8. Adjust seasoning.
  9. Garnish, serve warm, and enjoy.
