Main Ingredients:

  • 2 tbsp oil
  • 250-300g beef tenderloin, thinly sliced
  • 2 cloves garlic, minced
  • 2 stalks scallion, chopped
  • 1-inch piece of peeled ginger, thinly sliced

Instructions

  1. In a bowl, mix 1 tsp cornstarch, 1 tsp soy sauce, 1 tbsp water, and 1 tsp Chinese rice wine.
  2. Toss in 250–300g beef tenderloin, thinly sliced, and let it sit for 30 minutes. Don’t skip this; marinating gives it that soft, juicy bite.
  3. In a small bowl, whisk together 2 tsp oyster sauce, 2 tbsp soy sauce, 1/2 tsp dark soy sauce, 2 dashes ground white pepper, 1/4 tsp sesame oil, and 1 tbsp sugar. Adjust sugar if you like it sweeter.
  4. Heat 2 tbsp oil in a wok over medium-high heat.
  5. Add the marinated beef and stir-fry until halfway cooked (it’s okay if it’s a little pink). Remove and set aside.
  6. Add a tiny splash more oil if needed.
  7. Stir-fry 2 cloves garlic, minced and 1-inch ginger, thinly sliced until fragrant. This usually takes about 30 seconds; don’t let it burn.
  8. Toss the beef back in the wok, pour in the prepared sauce, and stir-fry until the beef is almost fully cooked.
  9. Add 2 stalks scallion, chopped at the very end, and give it a quick toss.
  10. Plate it over steamed rice and dive in!
