Marinade:
- 1 tsp cornstarch
- 1 tsp soy sauce
- 1 tbsp water
- 1 tsp Chinese rice wine
Sauce:
- 2 tsp oyster sauce
- 2 tbsp soy sauce
- 1/2 tsp dark soy sauce
- 2 dashes ground white pepper
- 1/4 tsp sesame oil
- 1 tbsp sugar (adjust to taste)
Main Ingredients:
- 2 tbsp oil
- 250-300g beef tenderloin, thinly sliced
- 2 cloves garlic, minced
- 2 stalks scallion, chopped
- 1-inch piece of peeled ginger, thinly sliced
Instructions
- In a bowl, mix 1 tsp cornstarch, 1 tsp soy sauce, 1 tbsp water, and 1 tsp Chinese rice wine.
- Toss in 250–300g beef tenderloin, thinly sliced, and let it sit for 30 minutes. Don’t skip this; marinating gives it that soft, juicy bite.
- In a small bowl, whisk together 2 tsp oyster sauce, 2 tbsp soy sauce, 1/2 tsp dark soy sauce, 2 dashes ground white pepper, 1/4 tsp sesame oil, and 1 tbsp sugar. Adjust sugar if you like it sweeter.
- Heat 2 tbsp oil in a wok over medium-high heat.
- Add the marinated beef and stir-fry until halfway cooked (it’s okay if it’s a little pink). Remove and set aside.
- Add a tiny splash more oil if needed.
- Stir-fry 2 cloves garlic, minced and 1-inch ginger, thinly sliced until fragrant. This usually takes about 30 seconds; don’t let it burn.
- Toss the beef back in the wok, pour in the prepared sauce, and stir-fry until the beef is almost fully cooked.
- Add 2 stalks scallion, chopped at the very end, and give it a quick toss.
- Plate it over steamed rice and dive in!
